Mexican Chicken Lettuce Wraps


Ingredients:
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 3 cups cooked shredded chicken
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 4-ounce can chopped green chilies
  • 1 1/2 cups salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Juice of 1 lime
  • Bibb, Boston, or iceberg lettuce leaves
  • Shredded cheese and sour cream for topping

Directions:
  1. Heat a small amount of oil in a large skillet. Add onion and cook until softened. Add garlic; cook and stir for 30 seconds. Season with salt and pepper.
  2. Add chicken, beans, corn, green chilies, salsa, chili powder and cumin; heat through. Just before serving, stir in lime juice.
  3. Place a portion of the chicken mixture in each lettuce leaf. Top with shredded cheese and sour cream.
