Ingredients:
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 3 cups cooked shredded chicken
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 4-ounce can chopped green chilies
- 1 1/2 cups salsa
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Juice of 1 lime
- Bibb, Boston, or iceberg lettuce leaves
- Shredded cheese and sour cream for topping
Directions:
- Heat a small amount of oil in a large skillet. Add onion and cook until softened. Add garlic; cook and stir for 30 seconds. Season with salt and pepper.
- Add chicken, beans, corn, green chilies, salsa, chili powder and cumin; heat through. Just before serving, stir in lime juice.
- Place a portion of the chicken mixture in each lettuce leaf. Top with shredded cheese and sour cream.
